FROM THE FARM TO THE KITCHEN

1. Mr. Munro had 800 acres of wheat. One field of 200 acres yielded 25 bu. per acre; another field of 175 acres yielded 23 bu. per acre; and another of 160 acres yielded 40 bu. per acre. The remainder of the land yielded 26 bu. per acre. What was the average yield of

the 800 acres? (Estimate it first.)

2. The Centennial Mill makes 600 bbl. of flour every 24 hours. In how many minutes is one barrel made?

3. When quarter-barrel sacks cost $52.50 per M, how many dollars' worth of sacks does the mill use in six days?

4. When 196 lb. of flour are made from 260 lb. of wheat, what per cent of the wheat becomes flour?

5. A bushel of wheat weighs 60 lb. (a) One kind of wheat is 12% gluten and another kind is 14% gluten. How many more pounds of gluten are there in a bushel of the second kind than in a bushel of the first kind? (b) If the first is 75% starch and the second is 71% starch, how many more pounds of starch are there in the first than in the second?

6. Fifteen pounds of farina are made from 60 lb. of wheat. What per cent of the wheat becomes farina?

7. A 2-lb. package of farina is sold for 35 cents. A 10-lb. sack of the same kind of farina is sold for 75 cents. How much more per pound is paid for the small package than for the large one?

8. From 440 lb. of oats, 180 lb. of rolled oats are made. 203 lb. go into "feed," and 57 lb. are lost. (a) What per cent of the grain becomes rolled oats? (b) Which is better, to buy a 2-lb. package of rolled oats for 38¢ or a 5-lb. package for 60¢?

INTEREST

When we have the use of property belonging to another, we pay the owner for the privilege of using it. For instance, if Mr. A lives in a house that belongs to Mr. B, he pays Mr. B a certain sum for the use of the house. What is that sum called? The amount that Mr. A pays depends upon the value of the house and the length of time for which the rent is paid.

When you rent a boat at the boat livery, you pay for it according to the time you use it. Can you give other illustrations of paying for the use of property belonging to others?

Sometimes a man finds it necessary to borrow money from another. Can he return the exact pieces of money which he borrowed? Should he return just as much as he borrowed? Should he return more than he borrowed? Why?

The sum paid for the use of a large quantity of money should compare how with the sum paid for the use of a smaller quantity of money?

The sum paid for the use of some money for a long time should compare how with the sum paid for the use of the same money for a short time?

Money paid for the use of money is interest.

Money for the use of which interest is paid is the principal.

The sum of the principal and interest is the amount. The sum to be paid for the use of money is always determined by taking a certain per cent of the principal. The number of hundredths of the principal taken as the interest for one year is the rate of interest.

For instance, if a sum of money is borrowed and 6% of that sum is the interest for one year, the rate of interest is 6%.

The rate of interest which is fixed by law is called the legal rate.

In a majority of the states the legal rate is 6%. In some states it is greater than 6%, and in some states less.

A lower rate than the legal rate is always allowed by law if the debtor and creditor so agree. In a few states a higher rate than the legal rate is allowed if the debtor and creditor so agree; but in most states a higher rate than the legal rate is forbidden by law. is the legal rate where you live?

Interest at a higher rate than that permitted by law is usury.
